Matt and I went to lunch at a spot in Queen Anne called Koku Cafe and Market. What would be perfect with my savory scallion and cabbage pancake? An IPA from Lucky Envelope Brewing! Lucky Envelope have been around since 2015, and they brew/have a taproom in Ballard. The Mosaic IPA is one of those beers that smells as divine as it tastes. Tropical notes, a hop punch and just the right amount of bitterness. It's a dangerous beer because it tastes SOOO good. I wanted to have more and more. The food at Koku also tasted oh so good, and this beer was indeed a perfect fit. I'm looking forward to a return trip to the brewery to see what else they're up to. The co-owners say their Chinese American heritage plays a role in what they brew and are finding ways to incorporate different ingredients in their beer to reflect that. I can't wait to try more.
